One of Piedmont’s most prestigious bubbles is Alta Langa. A brut sparkling wine produced by the classic method. Grape harvest period mid-August/early September. Manual harvesting of the bunches of grapes in small crates. Pressing of whole grapes and first fermentation of the flower must. Creation of the vintage with grapes from the same vintage and subsequent bottling with addition of yeast and sugar. Fermentation in the bottle and resting in cellars “sur lattes” at a constant temperature of 15-18°. Aging period over 30 months, remuage. Freezing of bottle necks, Dègorgement dosage of sugars and finally packaging.
Alta Langa presents a straw yellow color. The intense and complex aroma is predominantly reminiscent of toasted dried fruit and bread crust. Full, savory and enveloping flavor.
