September Recipe: pork tenderloin with figs and grapes

barberasup2smallThe summer and the holidays are now sadly behind us, but with a rich recipe and a
good glass of Barbera d’Asti Superiore of La Torre of Castel Rocchero we have a real chance to rejoice while dining.

PORK TENDERLOIN WITH FIGS AND GRAPES

Ingredients for 4 people:
1 small fillet of pork
10 slices of bacon
4 figs
1 bunch of grapes
2 cloves of garlic
1 glass of Barbera d’Asti
rosemary
laurel
extra virgin olive oil
salt and pepper

Wrap the cut of meat with bacon and after you have it tied with a twine, put it in a bowl and proceed marinating for about half an hour with a glass of our Barbera d’Asti, garlic and rosemary. Meanwhile, wash and grainy the grapes, clean the figs without removing the peel. Remove the meat from the marinade and brown in a pan with a little oil. Then transfer it in the oven at 200° for about 25 minutes.
Put the pan on the fire again, add the marinade, a bay leaf, salt, the grapes and figs and cook at high heat for a few minutes. At the end, remove the meat from the pan and cut it into slices. Serve with its sauce and the stewed fruit.
